All-Bran Muffins

A healthy bread that is not very sweet to go beside dinner or for snack or breakfast. You can choose to add in raisins or berries if you like. I just like it served with butter. 

2 c. All-Bran cereal (the original that looks like little sticks)
1 1/4 cup - 1 1/2 cup unsweetened almond milk
1 flax egg (1 Tbsp ground flaxseed with 1/2 c. water)
1/4 c. oil (or applesauce)
1/3 c. packed brown sugar or honey
1 Tbsp baking powder
1/4 tsp salt
1 1/4 c. whole wheat flour

(sometimes needs water)

Soak cereal in the milk for 5 minutes. Add other wet ingredients and beat well with whisk or hand-held beaters. Then add the dry ingredients. Save flour for last so as not to overmix. Pour batter into 12 muffin cups that either have papers or have been greased. 

Bake 400 degrees for 20 minutes. Serve with butter
