WFPB Fajitas


different colored bell peppers, sliced into strips
Portobello mushroom strips (optional), or chicken, beef
white onion sliced into thick strips
seasonings to taste, spritz of lemon or lime
favorite salsa (pioneer woman’s restaurant recipe is great or a pint of fresh salsa)
ww flour tortillas
vegan sour cream
Mexican rice on the side

Sautee bell peppers and onions in water with Mrs. Dash for about 5 minutes or with salt.  Add a spoonful or two of salsa and spoon hot filling into tortillas.  Serve with more salsa or any other desired condiments like sour cream and avocado. Can add beans or refried beans if desired.
