Red Lentils (as a soup or dish)
1 cup of red lentils, 1 potato, 1 sliced onion, 2 small sweet potatoes, 1
large tomato, 2 garlic, 1 Tbsp coconut
oil, 2 tsp of cumin powder, 2 tsp of coriander powder and 1 tsp of turmeric
powder, sea salt, 3-4 cups of water (more for soup, less for serving over rice),
handful of mixed greens (kale, spinach, Swiss chard) cook until potatoes are
done about 15-20 min. at 350F.
