Herb Dumplings for a Chicken Stew
Dumplings were brought over by our ancestors from Denmark
Makes 20-25 dumplings
Whisk together and Stir in; Melt:
1 1/2 c. all-purpose flour
3 Tbsp grated parmesian (optional)
2 1/2 tsp baking powder
1 tsp sugar
1 tsp salt
1/2 tsp pepper
1/4 c. chopped fresh chives
1/4 c. chopped fresh parsley
2/3 c. whole milk
3 Tbsp unsalted butter
Melt butter and milk in saucepan over medium heat. Stir into the dry ingredients just until moistened. Shape dough into bite-sized balls. Cook in a soup broth, simmering for about 10 minutes. A good soup is a summer garden vegetable soup with chicken broth, onion, carrot, celery, potatoes, cauliflower, zucchini, bay leaf, tomatoes, corn, green beans, okra, salt and pepper.
