French Onion Soup- from Cuisine At Home
One of Pat's favorites! Especially if he has a steak sandwich to dip into it!
Sweat and then Caramelize (about and hour):
1/4 c. olive oil
2 yellow onions, 2 white onions, and 2 red onions, sliced (about 12 cups)
1/4 c. garlic, minced
Add and reduce (cook until liquid is gone):
1 c. dry white wine (can substitute white grape juice for these, watered down, with a bit of lemon juice)
1/3 c. dry sherry
Stir in; Add and Simmer:
3 Tbsp flour- get it toasted then add while whisking:
3 c. chicken broth
3 c. beef broth
bundle of fresh thyme
salt and pepper to taste
Simmer for 10 minutes at least. While simmering prepare the bread topping below if desired:
Toast baguette slices, then add shredded Gruyere cheese on top and melt/brown under a broiler. Add Parmesan too if desired.
Serve the soup, topping each cup of soup with a toasted cheese bread floating on top. This will be eaten with the soup. Or dip your steak sandwich into the soup.
This goes will with a classic vinaigrette salad
