Feijoada Brazilian Black Beans

Brown in a skillet Hillshire Farms Polska Kielbasa Old World Style sausage that has been cut up along with some onion. I usually cut it into coins, or diced. You can use as much or little sausage as you like- a little will flavor the whole thing. Brown on all sides and then drain on paper towels. We prefer to do this in a skillet for the even cooking, but you can use a cookie sheet in the oven, or a grill.





Wipe pan clean or use a new pan.


Sauté an onion, then add the sausage back in with 3 cans of black beans (drained about halfway), 1 can of diced tomatoes, and a pinch of Italian herbs or cilantro or whatever you like.

Simmer all these together until most of the liquid is evaporated.  Sometimes this is 10 minutes, or sometimes I let it hang out for hours covered on low.  Serve over plain rice, or rice that has been fried and cooked with garlic, lemon, and cilantro. Done!

We took this to a large family once when they had a new baby and they loved it! We got a disposable 9x13 pan, filled it with the beans and sausage, and then topped it with the rice so it wouldn't get soggy. I think this would be great with collard greens and a bread on the side. Many serve it with orange slices too, to lighten it up. Make this WFPB by using smoked paprika, seitan, or mushrooms instead of the sausage.
