Biscochittos
Makes 48 to 60 cookies depending on how thin you roll them and how you cut them out.
6 c. flour
Recipe from Colson's:
1/4 tsp salt
3 tsp baking powder
2 c. shortening
1 1/2 c. white sugar
2 tsp anise seed
2 eggs
1/4 c. - 3/4 c. orange juice (use your judgement- in our dry climate I use it all)
1/4 c. white sugar
1 tsp cinnamon
Preheat oven to 350. Stir flour with baking powder and salt. Cream shortening with sugar and anise until fluffly. Beat in eggs one at a time. Mix in flour and oj until well blended. Add in the dry mixture and stir together.
Turn dough out onto a floured board and pat or roll to about 1/3 inch thickness. Thicker for a more soft cookie, thinner for a crunchier cookie. Cut into shapes and dust with the sugar cinnamon mixture.
Bake 10-12 minutes in oven until browned
