Pulled Pork BBQ Sandwiches (or shredded chicken or beef)
Above pictured with coleslaw. We had the leftovers below as a breakfast sandwich with eggs and cheese
Cook chicken, pork, or beef in a slow cooker or Instapot with broth, salt and pepper, and a bit of liquid smoke. Cook until you can easily shred it by smashing it with a fork.
Remove any fat or yucky stuff. Mix in your favorite BBQ sauce. We don't like it too sweet.
Pat likes these sandwiches with a (not too sweet) coleslaw on top of the meat. Yum!
(You can also sauté shredded cabbage instead of meat, but when you serve it to your kids, you will hear about it for the rest of your life).
*An alternative is to use chicken or beef and make it a Philly sandwich. Toast the bread with butter. Add a piece of provolone. Then add the meat of choice, seasoned as desired. Add sautéed onions, peppers, and/or mushrooms as desired. Can cook it all together in broth to make it easier. See below.
