Tuna Salad & WFPB Mayo

Tuna Sandwich

Serve on yummy bread or in a wrap or in a pita
*Regular tuna sandwiches are just tuna, mayo, and mustard with pickles and lettuce if desired.
Make WFPB by using lightly mashed chickpeas and the above ingredients, if desired. (See Isa's recipe below)
Isa’s WFPB Tuna salad
15 oz can chickpeas, rinsed and drained (or tuna)
¼ c. vegan mayo (homemade or storebought)
1 small wedge of red bell pepper very finely chopped
1 small stalk of celery very finely chopped
2 Tbsp onion flakes (or fresh onion)
salt and pepper to taste
Roughly mash chickpeas with fork. Stir in other ingredients. Serve with pickles, tomatoes, and lettuce all on whole wheat bread, or in a whole wheat wrap. If you want to give it a sweet twist, add diced apples, raisins or craisins.
Vegan No-Oil Mayo
1 c. raw cashews
juice of 1/2 lemon
¼-1/2 c. water
1/2 tsp. salt
1-1 1/2 T. raw honey
½-1 tsp mustard
1/8-1/4 c. acv
Blend until smooth. Which is not easy since there’s not much liquid. Makes about 1 cup. Cover and keep refrigerated or frozen.
