We always double this for our large family. Anyway...

Strawberry Syrup- Tori Avey
2lbs strawberries (rinsed and hulled and sliced)
4 cups water
2 cups sugar

Bring water and strawberries to a boil. Then simmer for 20 minutes, skimming off any skum off the top. After 20 minutes the strawberries will have lost most of their color and the water will be deep red. Using a slotted spoon, remove strawberry pieces and discard. Add sugar and bring back to a boil. Simmer for 10 minutes or to desired thickness. Then refrigerate in a glass container once cooled. Syrup will be thicker when cold.

Blueberry Syrup:
1 1/2 c. sugar
2 Tbsp cornstarch
1 1/2 c. water
1 c. fresh or frozen blueberries
1 Tbsp butter

Topping: In a saucepan, combine sugar and cornstarch. Add cold water. Bring to a boil over medium heat. Boil for 3 minutes, stirring constantly. Stir in blueberries. Reduce heat, simmer for 8-10 minutes or until berries burst. Stir in butter until melted. Serve over slices of blueberry french toast.
