Spinach Salad


I love this great salad. You can save time by using bacon bits instead of cooking bacon, and instead of making the dressing, use Brianna's Blush Wine vinaigrette. I like to chop up the spinach if I'm making this for myself because I dislike having dressing all over my lips when the leaves hit my mouth. 


baby spinach, washed well (one big handful per person)
thinly sliced purple onion (a pinch per person)
fried, cut-up bacon, drained and cooled (a couple pieces per person)
sliced eggs  (one per person)
salt to taste

dressing:
1/3 c. red wine or white vinegar
1/4 c. oil
1/3 c. sugar, honey, syrup, etc. (to taste)
salt to taste
1 tsp dijon mustard
poppy seeds (optional)
