Spanish Eggs

Pat and I had a friend who lived in Spain for a while and she taught us how to make this dish. We ate it for dinner a lot after we were first married.

Dice and fry up some potatoes seasoned with salt and pepper until soft.
Whisk up some eggs and pour over the potatoes and scramble it all together.
Serve with salsa and sour cream.

You could add anything to this you like. Tomatoes, mushrooms, peppers, onions, etc.
