Breakfast Burritos with Eggs, Bacon, and Hashbrowns (what we always make for seminary)


Golden Pride Breakfast burritos are a favorite! On Central in Albuquerque

Eggs, Bacon, and Hashbrowns are my kids favorite breakfast, eaten on a plate with salsa, or rolled up in tortillas.

Can't say how many times we've made these burritos for seminary early in the morning. They are always a hit.

Buy good tortillas that are easy to fold. Regular size. Not extra large.

Season and scramble eggs (salt, dash of milk, and Cholula)

Fry up some seasoned hashbrowns

Bacon, cooked crisp and crumbled (or buy a package of good quality crumbled cooked bacon)

Buy a jar of queso (cheese sauce mixed with salsa). We like Herdez brand. (not pictured)

On your work station, lay out squares of foil, however many you'll need. Cook the food above to the amount you need to make that many burritos. Then grab a tortilla, place it on your foil, slather it with the cheese sauce, fill it with a good spoonful of hashbrowns, then eggs, and then a sprinkle of bacon. Fold in sides, and roll up. Place in the corner of the foil. Roll, fold in sides of foil, and roll some more. Place in a warm oven until time to go!
