Pioneer Woman Restaurant Salsa



Whenever I make this people end up wanting to drink it! It goes great over creamy chicken enchiladas, nachos, tacos, and burritos.

1 28oz can whole tomatoes, with juice
2 cans (10oz) Rotel (diced tomatoes and green chilies)
1/4 c. chopped onion
1 clove garlic
1 whole jalapeno, quartered and sliced thin
1/4 tsp sugar
1/4+ tsp salt
1/4 tsp cumin
1/2 c. cilantro (or more to taste)
1/2 whole lime juice

This makes a very large batch for a party. If it's a smaller gathering, half the recipe. Recommend using a 12 cup food processor, or you can process in batches and then mix everything together in a large mixing bowl.
Combine everything in food processor and pulse until you get that salsa consistency you like. Test seasonings with a tortilla chip, and adjust as needed. Then refrigerate salsa for at least and hour. Serve with chips or nachos or anything you want salsa on.
