Cooked Greens
Greens cook down so much so start with a lot! And they need to soak in water so any dirt settles. Try chopping all the greens and then placing them in a salad spinner and filling up the salad spinner with water. Use clean hands to lift and turn the leaves a lot. Pour off the water that usually had sediment at the bottom. Then spin the greens to remove the water. Repeat as needed until it's clean.
Saute in water or fat, turning occasionally, until it's all done. Season with salt and garlic and vinegar if desired. Or serve with mayo (Tongan version) and lemon juice.
