Breakfast Sandwiches (& Croque Madame)

Sausage, Egg, and Cheese on English Muffin
Cook sausage in patties. While waiting for sausage to cook, split and lightly toast English muffins, and lightly butter them, and place a slice of cheese on one half.
Fry an egg per person. Then add the sausage and egg to complete the sandwiches.

Croque Madame
Make a white sauce with sharp cheddar cheese. Learn how to make a white sauce if you don't know how. (2 Tbsp butter, 2 Tbsp flour, 1 c. milk, 2 c. cheese melted in).

Slice French bread thinly or use white bread. You don't want the bread thick. Butter one side and toast lightly in frying pan.

To assemble sandwich:
First piece of bread, toasted side down.
Cheese sauce to coat bread 
a piece of ham
a sprinkle of sharp cheese
Top piece of bread with toasted side up
Cover top with more cheese sauce

Place sandwich under broiler until browned on top and heated through. Then place a perfect over-easy fried egg on top. This is to be eaten plated with a fork and knife.
