Beet Salad




Beet Salad
I buy a can of sliced beets but here's how to do it from scratch:

Wrap beets in foil and roast in 400 degree oven for about an hour depending on the size (or you could boil them).  When cool enough to handle, remove foil and push beet skins off with your fingers under running cold water.  

Slice beets into coins or thin strips or whatever you like.  

Serve splashed with a balsamic vinegar reduction and some fresh thyme if you have it.  Warning: beets stain everything red.
