Almond Sauce and Noodles (warm or cold)


Zesty Raw Almond Sauce and Noodles- Plant Powered Families
½ c. raw almond butter
½ Tbsp minced fresh ginger
1/8 tsp red pepper flakes
1 garlic clove, minced
3 Tbsp Tamari
3 Tbsp fresh lime juice
2 Tbsp pure maple syrup
2-3 Tbsp water plus more to thin
1-2 tsp fresh lime zest

Puree ingredients, stirring the lime juice in afterwards.  A great sauce for tossing with pad thai noodles (Annie Chun’s brand), soba noodles, or rice noodles.  Noodles can be warm or cool.  Stir in lightly-cooked-and-cooled kale, snap peas, green beans or broccoli.  Or serve noodles on a bed of lettuce with fresh veggies such as red onion, shredded carrots, purple cabbage, and tomatoes.  Can serve with lime wedges. (add chicken if desured)
