Almond Milk Recipe
1 c. raw almonds, soaked overnight in cool water
5 c. pure water (or less to thicken, more to thin)
2 dates (pitted) for sweetness, if desired
drop of vanilla, if desired
pinch salt, if desired
Blend almond with water in a high speed blender until creamy and smooth. Keep it running for 1-2 minutes so you get the most out of your almonds. Strain through a thin dishtowel over a mixing bowl. Gather corners and lift up squeezing until all liquid in extracted. Discard pulp or save to make baked goods. Transfer milk to a pouring container and refrigerate. Shake before drinking. You can make homemade milk out of coconut, rice, oatmeal, cashews, etc.
