Never-Fail Chicken and Rice

Never Fail Chicken and Rice
1 medium white or yellow onion chopped ( can add a bit of carrot and celery too)
6-8 chicken thighs, tenders, or breasts, no skin, fat, or bones
2 c. white rice
3 ¾ c. water
1 Tbsp olive oil
1 tsp Lawry's seasoning salt
1 tsp Montreal Steak seasoning 
-other herbs you like to taste (I do poultry seasoning which is all the green herbs, and garlic) 
1 Tbsp. Chicken bouillon

Throw all of this together in a sprayed 9x13 pan.  Cover with foil and bake 350 degrees for about 45 minutes.  Remove foil and fluff with fork.  Rice should be pretty much cooked, but if not, replace foil and return to oven for about 10 more minutes.  If rice is cooked, remove foil for last 10 minutes of cooking. 
Very flavorful, and you didn't need to add any “cream of” soups.  Serve with steamed broccoli or asparagus.
