King Arthur Perfect Pancakes
One recipe makes 12 pancakes (or 6 giant ones). I double this recipe, just enough for our 9 member family (the year we had Harper and Alaina Roof).
2 eggs
1 1/4 c. buttermilk (less or more as needed)
3 Tbsp melted butter or oil
1 1/2 c. unbleached flour (do half whole wheat flour)
3/4 tsp salt
2 tsp baking powder (or 1 tsp baking powder + 1 tsp baking soda)
2 Tbsp brown sugar or 1/4 c. malted milk powder (for that "diner" taste)
Beat eggs and milk until light and foamy, about 3 minutes with hand mixer. Stir in butter. Whisk together dry ingredients, then mix into wet ingredients. Let batter rest for 15 minutes. It will thicken slightly while pan is heating.
Drop 1/4 cupfuls of batter onto the lightly greased griddle. 1-2 minutes on each side until browned.
