Papi's Chicken or Pork Carnitas Burritos
6-7 pork loin chops (or boneless pork ribs, or other pork, same weight) cut into 1 inch cubes (they will shrink). Fry in some butter until browned on all sides in a walled frying pan.
Add water to fill the pan
Add about 3/4 c. orange juice
Add about 1/4 c. Hot Pace Picante (or other) Salsa
Add 2 Tbsp beef bouillon (or instead of filling the pan with water you can fill it with broth and nix this)
Boil all this uncovered until the water is almost all evaporated (takes about 1 1/2 hours). Then add 1/4-1/2 cup of whole milk and stir it in thoroughly. This pork is so flavorful and soft. Serves about 12.
If doing chicken, I just start with a rotisserie chicken from Costco, remove and chop the meat, and then toss in a buttered skillet with a bit of OJ, Salsa, salt and Chicken Broth. Finish with a bit of cream or milk. Done!
