Whole Wheat Tortillas- no fat



6 c. whole wheat flour (I like King Arthur White Whole Wheat)

1-2 tsp salt
1/2 tsp baking powder
2-3c. boiling water (I do 3 cups, but areas with more humidity than our dry New Mexico mountains, may need as little as 2 cups of water)

In KitchenAid stand mixer with paddle add all dry ingredients.  With paddle on low, slowly add the boiling water until it starts to come together.  Once incorporated, switch to dough hook and let knead for 5 minutes.  Put dough on the counter and let rest.  Then divide into 30 balls and roll out while cooking simultaneously.  Once cooked, tortillas must be placed in a clean towel to steam together or they will get crunchy.  Leave in towel until completely cool (a few hours). 

I freeze these in plastic bags in packs of five and use one bag per week for wraps or just eating plain.  This is a good item to have in your purse if you are going to be gone from home a long time where healthy food isn’t available.
