Waldorf Salad (or Bald Dwarf, as my children call it)
My favorite salad
Waldorf Salad
Assorted lettuces, cabbages, spinach, etc. Romaine works best
1 chopped roasted chicken breast 2 people
1 chopped apple
1-2 c. grapes sliced in half, or craisins, blueberries
sugar roasted almonds (or raw sunflower seeds)
bleu cheese crumbles
Sweet Balsamic Vinaigrette
about:
1 part balsamic vinegar
1 part honey
1 part olive oil whisked into the others slowly to emulsify
pinch salt
pinch salt
Variation: We make our
own bleu cheese dressing sometimes, and use that instead. If you use bleu cheese dressing, leave the
bleu cheese crumbles off the salad.
Mullen's Bleu Cheese Dressing
½ c. mayo
½ c. sour cream
4 oz pkg bleu cheese crumbles (make sure it's a good stinky
kind)
1 Tbsp lemon juice
1 Tbsp white wine vinegar
pepper to taste (optional: garlic, tabasco sauce)
Gets better as it sits, but I wouldn't go longer than 2 weeks
in the fridge.
