Rice Patties with Powdered Sugar
Pat loves rice patties, and our kids are starting to love them too. He got the recipe from his mom, and she got it from her mom. It is a great way to use up leftover rice, and just happens to be gluten-free which is popular right now.
6 cups rice, cooked (we use leftover rice)
6 eggs
1/8- 1/4 tsp salt
Mix rice and eggs together until loose but not runny. Whip up eggs alone first if desired, and then add rice. Cook on a hot skillet in lots of butter until lightly browned and patties hold together. Turn and cook a few minutes more. Serve with butter and powdered sugar.
