Lentil Tacos
I got this from my cousin Jennifer. These have a meaty texture and delicious flavor! This feeds a family of four. Double if necessary.
1 c. minced onion
1 clove garlic
1 tsp oil (optional)
1 c. lentils
1 tsp chili powder (or more)
1 tsp cumin
1 tsp oregano
2 c. chicken broth
Saute onion and later garlic in oil or water for about 5 minutes. Stir in lentils and seasonings. Cook 1 minute. Add broth and cook 10-45 minutes with the lid on until lentils are soft. We're on the longer end of that, but I noticed in California where the water is better and the altitude not so high, it only took about 10 minutes. Add more water if needed to make lentils soft. Once soft and liquid is gone, stir and mash slightly. Fill tacos and top as desired.
