Karisa's 5 Loaf Whole Wheat Bread

That pair’ll plump up for sure.” Mrs. Sowerby laughed so heartily… “I’ll tell thee what, lad,” (she) said when she could speak. I’ve thought of a way to help ‘em. When tha’ goes to ‘em in th’ mornin’s tha’ shall take a pail o’ good new milk an’ I’ll bake ‘em a crusty cottage loaf or some buns wi’ currants in ‘em, same as you children like. Nothin’s so good as fresh milk an’ bread. Then they could take off th’ edge o’ their hunger while they were in their garden an’ th’ fine food they get indoors ‘ud polish off th’ corners.”
My own recipe that is great for sandwiches, rolls, everything!
Mix the following in large mixing bowl:
5 c. Hot Water
3 c. White Flour
2 c. Whole Wheat Flour
2/3 c. olive oil
2/3 c. honey
½ tsp ginger
1 tsp vanilla
2 Tbsp salt
1 Tbsp powdered milk
1 egg (or egg substitute)
2 Tbsp yeast
5-7 cups Whole Wheat Flour
Add the above ingredients through egg, to the mixing bowl and stir until combined. Add 2 Tbsp yeast and stir in as well. Slowly add more Whole Wheat Flour until dough begins to clean the sides of the bowl (about 5-7 cups). If you have a mixer than can do bread dough, have it continue kneading on high for 10 minutes, otherwise by hand for 10-20 minutes on a clean floured counter. Add more whole wheat flour as needed so dough doesn’t stick and becomes smooth and elastic.
Divide dough into 5 equal parts as best you can, form loaves, and put each loaf into a greased bread pan. Cover with towel and let rise until the top of the dough is 1-2 inches above the top of the pan. This will take 1-2 hours depending on the humidity and temperature.
Bake at 350 degrees for 30 minutes. Let bread cool in pans for 10 minutes. Remove from pans and cool on racks. If your family won’t eat 5 loaves in a week then you can freeze them, once completely cooled, for later.
