Irish Brown Bread
1 1/2 c. King Arthur whole wheat bread flour (in Ireland it's coarsely ground)
1/2 c. Unbleached white bread flour
pinch salt
1/2 tsp baking soda
3/4 c. - 1 1/8 c. buttermilk (you don't want it dry)
2 Tbsp butter
1 egg yolk
Combine dry ingredients in a bowl. Melt butter in another bowl and slowly whisk into that the buttermilk. Then the egg. Then stir this wet mixture into the dry. That splashes of buttermilk if it's too dry.
Cook 400° for 35 to 45 minutes.
Makes one loaf.
