Black Bean Burgers with Chipotle Mayo (or use for breakfast Sausage, and WFPB Taco Salad)
Black Bean Burgers with Chipotle Mayo
Mayo is 3 Tbsp mayo with 1 Tbsp chipotle in adobo sauce mashed together.
1 onion, chopped
1 red pepper, chopped
4 garlic cloves, minced
½ tsp cumin
¼ tsp turmeric
2 Tbsp ketchup
1 ½ c. black beans
1 c. cooked quinoa
2 c. crushed rice crackers
1 ½ tsp salt
½ tsp pepper
1 tsp hot sauce
Saute onions, garlic and
peppers until soft. Add turmeric, cumin
and ketchup and cook for a minute. In
food processor blend onion mixture, beans, and quinoa until blended but not
pureed. Transfer to bowl and mix with
cracker crumbs, salt, pepper, and hot sauce.
Shape and grill in oiled skillet until crispy on both sides, about 5
minutes per side. Serve on whole grain
bun with lettuce, tomato, pickles and red onion and chipotle mayo.
Mayo is 3 parts mayo with 1 part chipotle in adobo sauce, chopped, and mashed together.
Black Bean Burgers- makes 8
1 onion, chopped

¼ tsp turmeric
2 Tbsp ketchup
1 ½ c. black beans
1 c. cooked quinoa (cook 1/2 c. quinoa with 1 1/2 c. water for 45 minutes, then measure out a cup)
2 c. crushed rice crackers (about a 4 oz box) blend to crumbs in food processor
1/2 tsp salt
1/2 tsp pepper
1 tsp hot sauce (Cholula)
Saute onions, garlic and peppers until soft. Add turmeric, cumin and ketchup and cook for a minute. In food processor blend onion mixture, beans, and quinoa until blended but not pureed. Transfer to bowl and mix with cracker crumbs, salt, pepper, and hot sauce. Shape and grill in oiled skillet until crispy on both sides, about 5 minutes per side. You need to get a sear on each side and then turn down the heat to medium or low and cook a long time until not so soft. Serve on whole grain bun with lettuce, tomato, avocado and chipotle mayo.
Crumble to make "sausage" for breakfast with eggs, or in a breakfast burrito.
