Isa's Beet Burgers



Bring 2 ¼ cups water to boil.  Add 1/3 cup lentils, and just over 1/3 cup brown rice.  Bring to boil again, cover, turn heat to low and cook 45 minutes.  Should make 2 ¼ cups.

2 ¼ cups of the above mixture
1 c. finely shredded beets
1 tsp Montreal Steak Seasoning plus pinch salt
1/2 tsp dry mustard
3 Tbsp finely chopped onion
2 cloves garlic, minced
2 Tbsp smooth almond butter
½ c. fine bread crumbs (1 Ezekiel toast pulsed fine in food processor)

After pulsing Ezekiel toast, add all the previous ingredients and mix until it comes together but still has texture like ground beef.  Heat oiled pan, and form patties using a measuring cup, cook a good long time until well browned.  Serve immediately, or cool and freeze.  Top with mushrooms, onions, cheese sauce, jalapenos, the usual fixings, or anything you like. I love Famous Dave's sweet and spicy pickle chips.
