Asparagus
Love asparagus! Here's how to prepare: Remove tough ends of the asparagus. This means figuring out where it breaks easily, and chopping off about there. Wash well.
Par boil asparagus (meaning partially cook it by dipping it in boiling water for about 2 minutes), then to a hot skillet or 400 degree oven, tossing with evoo, minced garlic, and salt. Roast or sauté for 3-10 minutes depending on thickness and size. You don't want them mushy soft, but not crunchy either, and you want the color to be bright green, not dull.
Once it gets a nice roasted look, squeeze a lemon over all, and serve.
I sometimes like to dip the spears in mayo.
