WFPB Pancakes
Sunday Morning Pancakes-based on a recipe from PPF
1 c. whole wheat flour
1 c. oat flour
1/3 c. rolled oats
2 Tbsp chia seeds
1 Tbsp baking powder
1 tsp cinnamon
¼ tsp salt
2 c. non dairy milk plus 2-3 Tbsp lemon juice
½ tsp vanilla
¼ c. ground flaxseeds
Where I live this requires ¼-1 cup of additional water to keep the batter thin enough to cook thin pancakes. Thin is better so you can judge when they're done easier.
