Spinach Dip
1 box frozen chopped spinach, defrosted, squeeze out excess liquid (I do 2 boxes)
1 packet Knorr vegetable soup (this is a dry soup mix that is increasingly hard to find!)
½ can of water chestnuts, chopped fine
1 small red onion, chopped fine
2 c. sour cream
1 c. mayo
Stir together all ingredients thoroughly and refrigerate OVERNIGHT. Serve with French bread pieces for dipping. It is my favorite Thanksgiving or Christmas snack, and I may look forward to it more than the meal! My family also loves the 7 layer dip.
